Located in the Copan region on the slopes of Honduras’s second highest mountain – Erapuca of Honduras. Altos de Erapuca is owned and farmed by Carlos Efrain Paz Sevilla, at an altitude of 1,300 to 1,360 MASL. The farm solely plants Red Catuai, which is atypical to Honduras, being known for the Cattimore variety. Carlos and his team of farmers are in full compliance with organic production rules and methods.


Washed (Organic)- wet pulping method is used, where both the skin and pulp are fully removed. The farm has opted to use a combination of the two drying methods. The coffee is first dried on the patio until the moisture content reaches 43%, after which it goes to the mechanical driers (known as Guardiolas) – which are maintained at 35 C for a period of 35 to 40 hours until the moisture content falls to 11 or 12 percent.
